Rome is the very heart of the Western world, and one can sum up Western history by describing it as the flourishing of Roman culture and the desire to imitate and revive it. Rome is also the heart of the Catholic church, which grew out of the wreckage of the ancient Roman world. As a result, even though the trip is primarily a culinary vacation, great attention will be paid to the legacy of the ancient Roman world with daily walking tours and visits to museums, churches, and archeological sites.

Our accomodation for the week is CasaGrande, a spacious four-bedroom, four-bathroom apartment just steps from Piazza Navona. This elegant property puts our group in the very heart of the modern city of Rome, a short walk from numerous culinary and cultural treasures.

Daily three-hour cooking and wine classes will explore the cooking and wine not only of the Roman region of Lazio, but other Italian regions as well. Each class concludes with a shared meal and will allow for plenty of time for the discussion and fellowship that are the proper accompaniment to good food.

Our meals out will focus on small, family-run restaurants which place good, traditional cooking above mere profits. The cooking of Rome is spirited and lively, full of strong flavors like garlic, hot pepper, rosemary, and pecorino-romano cheese. Some of the tradition dishes include spaghetti cacio e pepe, spaghetti alla carbonara, whole fried artichokes, and grilled lamb with rosemary and garlic.

The cost of the trip is $3000, which includes accommodations, cooking classes, tours, restaurant meals, and everything else we do together as group. A deposit of $1500 per person is due at the time of registration, with the final balance due three months before the trip.
