Classic Italian Cooking in Barolo

Barolo has long been considered “the king of wines and the wine of kings”, and for good reason. Barolo is the most noble Italian wine made from Italy’s most noble grape: Nebbiolo. It provides a lifetime of study and pleasure to those who are willing to make its acquaintance. This trip will focus on Barolo, and the other beautiful wines of the Langhe, such as Barbera, Dolcetto, and Freisa, with daily visits to top producers in the region.
Our accommodation for the week is the gorgeous Villa Ribota, located just a little north of the town of Novello, in the heart of the Barolo production zone. It is the perfect launching off point for our daily visits to some of the most important producers in the Langhe. The Villa is surrounded by vines and offers abundant opportunities for long walks and peaceful vistas.
Daily three-hour cooking and wine classes will explore the cooking and wine not only of the Laughe region, but other Italian regions as well. Each class concludes with a shared meal and will allow for plenty of time for the discussion and fellowship that are the proper accompaniment to good food.
Our meals out will focus on small, family-run restaurants which place good, traditional cooking above mere profits. The cooking of the Langhe is luxurious and rich, with more meat than some other regions and a generous use of butter and other dairy. Some of the traditional dishes of the region include agnolotti al plin, tajarin with white truffles, and beef braised in Barolo wine.
The cost of the trip is $2750, which includes accommodations, cooking classes, and restaurant meals, every major expense except for airfare. A deposit of $750 per person is due at the time of registration, with half the balance due six months before the trip and the final balance due three months before the trip.
